Brioche

ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup warm water
  • 3 1/2 cups flour
  • 6 tablespoons granulated sugar
  • 1 pinch of salt
  • 1 1/4 cups milk
  • 2 eggs
  • 100 g butter
  • 1 1/4 cups chocolate chips

Egg Wash

  • 1 egg
  • 1 tablespoon vegetable oil

Method

  • Step 1

    In a bowl, whisk together 1/4 cup warm water, yeast, and a pinch of sugar and let rest until fluffy for 5-7 min.

  • Step 2

    İn a large bowl of a stand mixer or in a large bowl put flour, milk, sugar, salt, eggs, and the foamed yeast. Mix until combined for about 3-4 minutes.

  • Step 3

    Cover it with a cloth or plastic wrap and let it rest at room temperature for 8-10 minutes. After that, knead the dough by stand mixer or hand. Add room temperature butter to the dough and continue to knead for 12-15 minutes. Transfer the dough to a large oiled bowl and cover with a plastic wrap or kitchen cloth and let it rest in a warm place until doubled in size for around 1 1/2- 2 hours.

  • Step 4

    Place the dough onto a lightly floured surface and divide the dough into equal two pieces. Using a rolling pin or your hand, roll out each dough into a small rectangle then add chocolate chips and fold and shape the dough as in the IG Reel. Using a sharp razor blade, cut around the dough horizontally as in the IG Reel. Repeat all these steps with the other piece.

  • Step 5

    Transfer the breads onto baking sheets lined with parchment paper, cover it with a kitchen towel, and let it rest for 40-50 min at room temp.

  • Step 6

    Preheat the oven to 350F.

  • Step 7

    In a small bowl, beat the eggs and the oil together. Brush each bread with the egg wash and bake 25-30 min until golden brown.

  • Step 8

    Remove the breads from the oven onto a cooling rack and allow them to cool just a little bit. Serve warm.
